CPU is on Windows 11 supported list, but that is not how Windows 11 sees it

For the last couple of months we have had issues installing the Windows 11 updates on our VDIs. After more testing and troubleshooting and trying to upgrade to Windows 11 22H2 we have been able to determine the issue is that the CPU is not showing as supported. Even the PC Health Check shows it as unsupported:

I have checked many times and this CPU (Intel Xeon Gold 6348) is on the supported list at https://learn.microsoft.com/en-us/windows-hardware/design/minimum/supported/windows-11-22h2-supported-intel-processors

It seems like something caused this processor to be dropped last month or so when we started having this issue. Does anyone know a way around this or is there someone at Microsoft that can check their end to make sure this CPU is on the supported list?

This configuration should be fully supported, so we would like to be able to keep everything up to date.

    Unfortunately, I have tried the bypass and it doesn't appear to work for updates. The updates still get to almost 100% and then roll back.
