How to Capture an image in MDT that has already been sysprepped.

I have a VM that I am sysprepping. There is one MS App that I cannot remove and sysprep breaks in MDT. So if I manually sysprep the VM and it shuts down,

how do I boot it to MDT without it coming back up into the OS?

It is not supposed to reach the OS desktop if I believe. So, once my Vm is shut down after being sysprepped, how do I use MDT to capture it to a WIM?
Is it not a true statement that once the VM comes back up to the desktop, it is no longer sysprepped with a unique ID for deployment?

    You boot the system into WinPE and run the capture from there.

    Why do this at all though? The current common path for Windows 10 is to deploy the base media (that has been serviced to include the latest CU) and they layer on all changes and customizations after the base image is deployed. This is a far better experience for all involved and requires far less tinkering and time. Building images, in general, should be considered a dead and left-over path from the dark-ages of Windows deployment and provisioning.

    Sometimes we need to create images of clients without making changes to the original systems for backup purpose. This can be the case when software is installed by hand, specialized equipment is attached or software is licensed based on specific characteristics (SID).
