According to the link "Can't find the database modeling features?", Visio Professional and Premium editions support the reverse engineering features for the Database Model Diagram template, which is included in "Software and Database" template categories.
So "Software and Database" template categories still exist in Visio Professional and Premium 2010.
On your computer, maybe there is something wrong with Visio installation that caused the template category could not be available.
It is recommended that you repair Visio from Control Panel to check this issue.
As a workaround, I suggest you locate to C:\Program Files (x86)\Microsoft Office\Office14\Visio Content\1033
, make sure the templates you need are included in this folder 1033, such as Database Model Diagram template ( DBMODL_U.VST or DBMODL_M.VST).
Then go to File > Options > Advanced > File Locations (Scroll to bottom) > Specify the path above in the “Templates” field.
Restart Visio, check whether the tempaltes listed on "New" interface.
