I understand that you are having questions regarding the effective routes seen in the route table.
As shown above, Once the Express Route or Virtual Network Gateway circuit is established and routes are advertised to Azure, these routes are added with source as Virtual Network Gateway into the route table.
Regarding internet connectivity, do you need traffic to go over the internet direclty without the express route connectivity? If so, you need to add a Public IP to the VM so that it can be routed via the internet.
If you need it to be routed via the Express Route circuit, you need to setup the circuit on both sides and advertise appropriate routes so the traffic can take this path. Hope this helps.
