Hi,
I would like to set the working days in the Cortana Briefing email as my working days are Sunday to Thursday. Perhaps you could enable multiple selection box of the days of the week we wish to receive this email:

Have you modified the workdays in Outlook or Outlook on the Web?

I suppose the information of your workdays in viva-insights (Cortana briefing emial) is based on this setting.
I have, yes. For some time now (both Outlook and OWA) and I still get the email on Friday, never on Sunday:
