If we sign up for Viva Analytics tomorrow is that when the logging occurs so we would need to wait till we had recorded enough data points to make relevant decisions or is this logging already occurring and we could get useful insights from day 1?

The collaboration data which Viva Insights uses for analytics is much provided by Microsoft Exchange Online.
These data would be extracted during setup.According to this link: Product availability
It takes about one day before you can use Viva Insights for analysis.
For organizations with many licensed employees, it might take slightly longer. -
