"...Rollback Undo...bak" This seems to be your backup file? Do you mean there are a lot of backup files?
Yes, you can manually delete old backup files without affecting the restore database.
But in the long term, I would suggest you create and schedule a maintenance plan in SQL Server Management Studio. You will be able to add a single step (or multiple if you want to automate nightly backups) to clean up back up files after x hours/days/weeks/months.
