Using New Outlook on Windows for professional communication and productivity

Based on your description, I understand that in New Outlook, you’re unable to view who selected each option in the poll you created within an email template.
Regarding this situation, I have tested it on my end, and here is the result:
When I inserted a Poll when I created a new email, at first, I didn't tick on this option: "Record names of respondents" at the bottom of the poll.
So, when I exported the result, it only showed Anonymous for the respondents:
Even in Microsoft Forms, the names wouldn't be shown as they weren't collected/recorded from the beginning:
The next time, I sent another poll within the email, this time I ticked on "Record names of respondents" at the bottom of the poll.
After collecting the responses, I went to Microsoft Forms, opened the Poll that I created in Outlook, click on View responses > More details > I could see the names of the respondents there:
Therefore, I suggest creating a new poll and ticking the Record names of respondents" option at the bottom of the poll so that you could see the results in Microsoft Forms.
