My SharePoint language is set to Dutch. However, the mails I receive from SharePoint where people are asking for permission to a document, are all in Danish. How can I make sure that these emails are also sent in Dutch (or English)?

For communication sites, the language of the access request is the base language of the site (note, not necessarily the site collection). It does not depend on the language to the requester nor the language of the recipient. The base language is set when the site is created, and can not be changed later.

Most versions of Outlook let you translate most messages. Unfortunately, these types of system messages are not well handled by Outlook's translation, so only small bits of it will be translated by Outlook. Even Immersive Reader is unable to translate much of it. You're stuck with messages you don't understand, unless you delete the site and re-create it in a different base language. Or forward the message to a gmail account, read it on a browser and use Google's translation.

Go to your OneDrive site.  Replace the "onedrive.aspx" with "muisetng.aspx" on the URL link, then "Show advanced settings".

It will tell you the "default language" for the OneDrive site and any other supported languages.  Tenants that are less than 3 years old will typically have all languages checked, older ones will have none or very few.  Select the languages that you want, then change your "My Display Language" Remember that the "My Display Language" takes a long time to take effect, so wait 10-15 minutes after a language change before you share on either OneDrive or SharePoint.

It should be obvious, all your menus will change language.  The email will go out in the language of your current UI on that site.

From your description, I understand you want to set the notification email language in English or Dutch.

Per my test, the notification email language is decided by the default site collection language. The default site collection language has been set when the creation of site collection.

So, you need to set site collection language as English (Dutch) or translate the Outlook email into English (Dutch).
