As I understand you would like to know how the activity timestamp under devices section of the User profile within Azure AD.

I have all these columns:
Name Enabled / OS / Version / Combination Type / MDM / Compatible / Registered / Activity
I'm interested in interpreting the last one. It is a date and time.
What does that date and time mean?
Researched on this activity timestamp is triggered by an authentication attempt of a device. Azure AD evaluates the activity timestamp when:
A Conditional Access policies requiring managed devices or approved client apps has been triggered.
Windows 10 or newer devices that are either Azure AD joined or hybrid Azure AD joined are active on the network.
Intune managed devices have checked in to the service.
If the delta between the existing value of the activity timestamp and the current value is more than 14 days (+/-5 day variance), the existing value is replaced with the new value.
You have two options to retrieve the value of the activity timestamp one option is from the portal ( as mentioned in the query ) other option is via Get-AzureADDevice cmdlet (https://learn.microsoft.com/en-us/powershell/module/azuread/Get-AzureADDevice?view=azureadps-2.0)
