Is there any way to get Kubernetes 1.19 in AKS? Maybe in dev test labs?
I know it's no longer supported, but we have a customer running an old version of our product, and I would need to set up a test environment.

AKS (Azure Kubernetes Service) does not offer Kubernetes 1.19 as a supported version. However, you may be able to set up a test environment for your customer using Azure DevTest Labs.
In Azure DevTest Labs, I think, you can create a virtual machine (VM) and install Kubernetes. You can then use this VM as a test environment for your customer's old product version. To set up a VM with Kubernetes 1.19 in Azure DevTest Labs, you can follow these steps:
Remember that Kubernetes 1.19 is no longer supported and may have security vulnerabilities or other issues. It is recommended to use a supported version of Kubernetes in production environments. Please verify and let me know if it worked. Thanks.

From your question it looks like you are seeing if an exception can be put in to deploy a cluster in an unsupported version for testing (1.19).
Unfortunately, at this time we do not support deploying unsupported versions of Kubernetes in AKS. The below document covers our support policy.
