Everything is current (brand new install of Visual Studio, etc). I can build and run the app on Windows and I can build successfully on Mac but when it goes to launch whether it is debug or release it simply says "Execution failed." Which honestly, is not super helpful. Has anyone else seen this and have some magic pixie dust to sprinkle on this one? If I build the template .NET 7 MAUI Blazor app it does build an run on my Mac so I think I have everything set up correctly.

Started to see the same issue after upgrading to 17.6.2 (build 405) on a desktop project.
Looks like one of symptoms is that Mac Catalyst -> Build tab is empty:
Creating a new Desktop Mac Catalyst project runs fine (and has this tab filled).
