If you want SharePoint to load site collections contents normally, you should start 2 SQL Servers, 2 WFE Servers, 2 App Servers and 2 Distribution Cache Servers.

Turn on Search Servers, Office Online Servers and OneDrive Servers when you need Search, Office Online and OneDrive capabilities.
