To re-enroll the device with another method, based as I know, we can delete the device in Intune. unassign the device in ABM, reassign the device to our MDM server in ABM and after the device sync to Intune, assign the new enrollment profile to this device. Then go to device side to reset and enroll again. Here is a link with the steps to configure shared iPad for your reference:
