Unfortunately, there is no out of box feature from Azure/Microsoft which can hide Sensitive Azure Portal Info while screen sharing.
At present Az Mask Extension (

is the only available option to hide some of the Azure portal sensitive information. I agree that it doesn't hide sensitive information at all places. Hence, I recommend sharing feedback with respective developers for improvements here - https://github.com/clarkio/azure-mask/issues
