Windows Server - Antivirus exceptions

Hello

Our company just changed their AV product.

The new product provides more centralized management of Windows servers.

However we are not sure of what policies to apply to various windows servers

I'm looking for a list of anti-virus exceptions for these Windows servers and products:

Servers : 2012, 2016, 2019

Products : Microsoft SQL, Microsoft RDS servers, Exchange 2019, File server, Veeam backup server

Has anyone got a list of exceptions handy for any of these products?
