Does dictation in 0365 connect to an external server?

Hi All

I work for a law firm and as such, data integrity and security is paramount. We have a user who wants to use dictation in word and outlook (using the dictate button, not the system wide dication). before this approved i need to know if this sends any data externally to another server and i can't seem to find this info

    According to the article, Dictation lets you use speech-to-text to author content in Microsoft 365 with a microphone and reliable internet connection.

    For real-time Speech-to-Text, audio input will connect to Microsoft speech recognition engine, and is processed only on the server memory, but no data is stored at rest.
