Office 365 - Azure Groups

Question

We have teacher licenses and use shared generic users for courses/groups with clients.
Now the shared users of the teachers have access to the database of all the Teams in the organization.
Information of all the users of the organization.
It is true that when they click on the Teams, or on the students or on the Info they see, they only see it,
they don't have permissions to make changes or view content, but it's sensitive content and they shouldn't be seeing it.

Is there a way that this doesn't happen?

Have you looked at the Information barriers functionality? https://learn.microsoft.com/en-us/microsoft-365/compliance/information-barriers-teams?view=o365-worldwide

You can use it to "segregate" the organization to various segments and prevent users from different segments from seeing or communicating with each other.
