How to reassign approval flow after the approver left the company?

Hello,

I have a approval flow. I'm looking for a find a way to reassign the flow after the approver left the company. I couldn't find a solution for this. MS articles says only approver can reassign the flow but it doesn't make sense because after we assign it to an user, that user could leave the company. How can I achieve this? Thank you
