SharePoint 2013 Patching

Our SharePoint Servers have been behind on patches, we've tried patching and have run into issues. We are in the process of migrating to O365, but there is a new KB that came out this week that is making us think we need to try to update these servers until we are able to get everything off of them. The new KB is KB4486694, our environment is at:

Configuration database version: 15.0.5131.1000

What would be recommended for us to patch the server? Could we patch this security patch or do we need to apply others first?

    yes, but if you get the version from UI then it's not mostly trusted one, use PowerShell to get accurate version.

    well if you are migrating to a different SharePoint On-Premises farm then updating your SharePoint Farm is the best way, but if you are migrating to Office 365 via 3rd party tool then I don't you need to worry about latest patching.

    Per my understanding, if you have already started the migration, it is not recommended to apply patches during the process. And it will do no harm patching your servers before the process starts. As you have installed SP1, it is always recommended to update your farm to latest version. If you are using a 3rd party migration tool , just contact with the provider for needed instructions. When using the SharePoint migration tool, please follow the official documentation to perform the migration.

    If you are in the process of migrating to Office 365 then I would say ignore patching and start migrating.

    But if you are planning to do patching, first make sure you install the Service Pack 1 on all your SharePoint Server's then install the latest Cumulative update. to get accurate farm version run below command.

    (Get-SPFarm).BuildVersion
