Since Windows IoT Core is already cancelled, best to use Linux with .NET for your current hardware. If you want to move to a different platform. Windows IoT Enterprise supports ARM64 specifically NXP i.MX 8.
Windows 10 IOT Core support for TI AM335x

Hi,
One of our product is currently on Win CE 7 running over TIs AM3352 SOC, we were considering to migrate from Win CE to Win 10 IOT Core to keep the migration efforts minimum.
The hardware requirements document of Windows 10 IOT Core mentions that any ARM SOCs with V7 instruction set is supported.
However, we wanted to understand if Win 10 IOT Core supports TIs AM335x, which is based on ARM V7.

apart from your question regarding the support, keep in mind the Windows IoT Core is considered deprecated already on November 10, 2020.
I have no degree in this electronics subject but the data sheet states both Linux and RTOS are supported.
I suggest checking out RTOS which is a modern alternative.
