if possible in Microsoft exchange 2016 (or any exchange version) how to restrict access from mobile applications for mailbox and give access only to calendar synchronization.
so that there is no access to emails from the mobile application.

Hi that is not possible to do that in any Exchange version or Exchange Online if the user owns that mailbox.
If the mobile device is accessing another mailbox and the calendar is shared from that mailbox, then that would work

Agreed with Andy that it's not feasible in any versions of Exchange server or Exchange Online at present. And as far as I know, it's not possible from the perspective of Outlook clients for mobile either.
Found some posts requesting the similar feature in the official feedback portal for Outlook on mobile platform and I've voted them up. I'll share some of the links here in case you or others see this thread want to add vote or comment there as well. Hopefully this can be accomplished in the future.
By the way, if Andy's reply has been helpful, you can consider accepting his post as answer to help increase visibility of this question for other members of the Microsoft Q&A community :-)

I correctly understood that there is no any way in Exchange 2016 (or any exchange version) to restrict access to the mailbox and provide access only to the calendar of those users who connect from an external (outside the organization).
