As of one point, we can't connect any device to Azure AD, it always throws the error "Unable to automatically detect the management endpoint corresponding to the specified user name..." and it asks me for the URL of the MDM server, which when I looked we have defined

Can you check the logs for the endpoint and event logs on the devices it should provide some error code that should assist in the investigation process - also check this troubleshooting page - https://learn.microsoft.com/en-us/troubleshoot/mem/intune/device-enrollment/troubleshoot-windows-enrollment-errors

I also try it through Intune, when I enter an email the same error pops up that it doesn't know the URL of the MDM server, as soon as I enter it, a new error pops up "we can't automatically detect the endpoint of the message corresponding to the entered username..."
Currently I'm looking, we haven't configured any configuration profiles in Intune... could be the problem?

For this issue, could you please show the screen shot of the settings under Devices > Enroll devices > Windows enrollment > automatic enrollment in intune portal?
For device enrollment, we usually set "MDM user scope" to "all" and "MAM user scope" to "none". And the URLs are default.
