this is a great question, especially because I asked myself that question ~8 years ago.
Becoming an expert takes a lot of time, doing multiple (a lot of) IoT projects.
Most importantly, you must have a very broad interest in everything because you need to build up knowledge about the cloud, databases, messages structures, network infrastructure, security, protocols, devices, communication, wireless transmissions, OT, IT, etc. As an IoT developer, you connect everything, both the cloud and the physical world!
So, where to start?
There are a couple of ways to start learning.
First, there is the 'IoT for Beginners'. This is a learning-by-doing course so you need some hardware.
As an alternative, this collection is a great start to learning Azure IoT using the MS Learn training modules and learning paths.
