Yes, you can safely shut down all of your servers after utilizing the Microsoft Office 365 Hybrid Configuration Wizard to disconnect your on-premises Exchange infrastructure from Azure AD. This includes Active Directory.
All of your users and data's storage will be in the cloud when you disconnect your on-premises infrastructure from it. To administer your users or data, no on-premises servers are required.
Before you shut down your servers, you should do the following actions:
- Ensure that you have a backup of every piece of data you have.
- Ensure that every single one of your users has switched to the cloud.
- Verify that all of your on-premises DNS records have been deleted.
- Verify that your MX records have been changed to point to the cloud.
