I understand that you have attempted some troubleshooting and from my research this is a known issue, and the Microsoft 365 team is investigating the issue by analyzing logs provided by some affected users.
Some of the scenarios that receive the error Something went wrong  are related to security software causing impact on the WAM plug-in (AAD.BrokerPlugin). For more information, see: Can't sign in to Microsoft 365 desktop applications.
If this issue continues, please open a support ticket in the M365 Admin Portal.
