When you use "Save as ..." option, Excel opens the origin folder, so there shouldn't be a problem.
How to save my excel doc in the folder it is in
If I am in a document and I need to save it, but just change or add something to the name of the file, I also have to then change the folder it is being saved to because it is automatically saving to my :C drive instead of the folder it is in. How do I correct this and put this back to the way it should be?

How did you save the file? Click the top left save button directly?
You can go to File- Save As- select the save location- click Desktop to open the Save As dialog box and you can select the location you need:
