I was looking at the file types that are supported by the Azure Information Protection unified labeling client through Microsoft purview and I was wondering how exactly it detects files like PSD, docx, vsdx, and xlsx? if there is anyone with answers that can help me understand please do not hesitate to let me know thank you.

AIP supports a range of file types listen in the following link

    https://learn.microsoft.com/en-us/azure/information-protection/rms-client/clientv2-admin-guide-file-types

With the help of administrators' pre-established criteria and circumstances, AIP can automatically add labels to documents, enabling it to identify sensitive data—like credit card numbers—in Word documents and other types of documents. To protect data, AIP uses the Azure RMS, which is integrated with other Microsoft services and uses identity, authorization policies, and encryption. This ensures that the protection is retained with the documents and emails no matter where they are located, allowing the owner to retain control over the content even after it is shared.

AIP scanner, running on Windows Server, uses policy rules to detect sensitive information and apply specific labels to documents; it can also apply a default label to all documents in a repository without inspecting the file contents; or it can be used in reporting mode to discover sensitive information. For on-premises storage, the scanner can be used to discover, classify, and protect documents stored on network shares and Microsoft SharePoint Server sites.

You basically make the classification link with DLP policy.

    1. Create classification Policy
    2. Agent installation
    3. Create DLP policy - MIP classification policy.

Sample 1 policy : You define in policy that a file like .pdf when ever get printed , it should trigger alert.

Sample 2 policy : You created policy whenever a word document which is classified as restrictive or confidential is copy to a USB should trigger alert.

MIP classification based policies are quite fun and useful in daily operations.

Now your other part of question :

File types supported for classification only
