I'm learning more about .net maui, I would like to know how I can associate a ".txt" extension with my Android/iOS application so that when the user opens the file with the ".txt" extension, they are redirected to my application

Do you mean you download or save a txt file in other apps , and then open it via your app through the app sharing sheet? For Android, you could try intent filter. For iOS, it's not clear to use share extension or set CFBundleDocumentTypes, please describe more about your expected behavior.

I got it. For Android, you could try Android intent filter: file extension. For iOS, you could use iOS share Extensions. (Since there is not such official doc about it, you could refer to iOS Extensions #3289)
