How can I setup my app registration to use values other than name in the authentication?

Hello,

I've setup an application that uses SSO (oauth2 via Azure ) to authenticate users and in terms of scopes the only scope the application seem to accept is openid, and it uses name as principal field, I'd like to use email instead for this authentication and didn't seem to be able to get it to work so far. Any help please?
