After creating the Azure Subscriptions - what is the best way to auto generate the documentation/ architecture diagrams of the Azure subscription?

Azure does have some automatically generated diagrams, but it is limited.

Azure Network Watcher Network Topology will outline the resources in a Virtual Network, but this will not show resources that are not in a Virtual Network (like most PaaS Services). Depending on what you are looking for, you will likely need to do the documentation manually.
