so will sharepoint creates a new version when the status is changed from Saving to Saved? now based on my test the version will only increase if i close the document or open the word document for more than a minute... but i am not sure what is the official documentation regarding this case?
Thanks in advance for any help.

Any time the document is saved, which includes the auto save feature, the version number is incremented.

Per my test, even if I open the document quickly for editing, then autosave, SharePoint Online also create a new version.

In the text below, it means that when you open the document once, autosave multiple times, only one version will be created.

Periodically, when editing and saving Office documents. Not all edits and saves create new versions. When saving edits frequently, for example, each new version captures a point in time rather than each individual edit. This is common when autosave is enabled.
