Only if the VMs are onboarded via Azure Arc for servers.

So this is not related to onprem hypervisor, and any windows server can protected using defender cloud if we onboard the server via Azure Arc. Am i right?
Correct. As long as the OS is supported by Azure Arc for Servers and if it is supported by the feature in case the feature has some specific requirements that narrows down the support coverage.
