is there any Any tool for Assessment of cloud environments to Azure which we can use without deploying the Appliance on the host server, keeping in mind the assessment tool should be able to record the Peak usage during weekends?

    If you do not want to deploy appliance, you can try to import the CSV:

    Import your on-premises or cloud server inventory using a CSV file. You can use the imported inventory to create a quick business case for migrating to Azure IaaS and an assessment for migrating to Azure VM or AVS. Use CSV import to get a quick assessment on cost and compatibility. For accurate business case and assessments, use appliance-based discovery and profiling. Learn more 

    But if you really want to check the performance, you need the appliance in your environment, there is no workaround. You would need the following

    Azure Migrate Project

    Azure Migrate: Discovery and assessment tool.

    Azure Migrate appliance for VMware or Hyper-V. The appliance discovers on-premises servers, and sends metadata and performance data to Azure Migrate: Discovery and assessment.

    Update:

    For your requirement, you can utilize RVTools by following this guide: RVTools - VMware Tutorial. However, please be aware of its limitations. It's important to review the key benefits and limitations of using RVTools.XLSX before you plan to implement it.
