We still have $100k credits remaining but our subscription is expiring. To budget appropriately I would like to know the month to month breakdown of the costs that we can assume will be associated with continuing. However when I got to usage details, it says I don't have an active sponsorship. How does this even make sense?

Navigating to https://www.microsoftazuresponsorships.com/Balance (via Monitor Azure spend) to view the usage. Only account owners are able to access this portal, please check this doc: Track Credit Usage
Please ensure that you are logged in as the Azure sponsorship account owner.

Could you confirm if it shows as active in the sponsorship portal
You can check the sponsorship portal https://www.microsoftazuresponsorships.com/ portal to confirm its current state
If it does, I would recommend you create a billing ticket here

It says that I don't have an active sponsorship. BUT we are actively using Azure credits. Is there a separate credit portal for the startup credits? Or another space that I could find this information?
