According to your case description, the previous external user information is still saved in your Teams. According to the documentation, if the information of the external federated contact is currently cached on your computer, the contact may be displayed in the search results.
Therefore, it is recommended that you clear the Teams cache.
For the question: Delete these users/IDs so that other team members do not refer to these wrong entries in chats, messages, meetings, etc.?
Sorry to tell you, deleting these is a cumbersome process, the easy way is to hide them.
