You can turn on Teams meeting transcription.
When transcription is turned on, users have a written copy of the spoken text that is captured in near real time. After the meeting, users can find the searchable transcription stored with the meeting recording. If transcription was turned on for the recording, Stream plays the video with the transcript next to the recording, and shows who is speaking and when as the video plays.

You can also assign meeting organizers a Teams Premium license, which provides Intelligent Recap, which recognizes spoken names and general topics covered in the meeting after the meeting is recorded. The technology can suggest “sections” that organize and summarize the meeting. It can even suggest action items based on what was discussed.
That information, along with information about what happened in the meeting (for example, when a participant shared their screen), is available to all meeting participants within minutes after the meeting ends.
