How can I send and receive emails in a different folder than the inbox folder?

A long time ago, Outlook had an option for sending and receiving emails in folders other than inbox and sent folders. I used to set up folders for different projects and keep all of my communications in those folders. I could avoid moving emails from my inbox and sent folders because emails were going to and from these other folders. I do not see an option in the new Outlook/Office unless I set up a rule. I have many projects and don't want to create multiple rules to manage these emails. Do you have a suggestion?
