Are the files displayed under the Recent list in File Explorer always the same specific ones?
Do you mean that the date of these files that appear in the Recent list is not the date you last opened them?
Additionally, have you shared these files with others?
Which version of OneDrive are you using? OneDrive for Business or personal OneDrive?
I understand that this situation may cause trouble for you to quickly locate the files that were truly recently used. I suggest you reset OneDrive to see if it helps.
In addition, OneDrive activity in the background cannot be avoided. You can try to temporarily stop OneDrive synchronization for a check.
