Defender for IoT OT sensor; Is there any documentation that states what are the different details that OT sensor collects from the network?

I understand from the given [link] that the OT sensor networks will provide all the details which enables raising alerts as mentioned in the url.

Is there any documentation which gives a clarity on what information is processed by the defender for IoT's OT sensor so that we can utilize the collected information and not just the alerts?
eg; Is it possible to know if all the dns activities would be captured by OT sensor? Either Yes or No, what documentation can i refer to clarify this ?

I have only experience with the client agent king of Defender For IoT.
I expect you already checked both the CLI and the API reference?
