Unfortunately, once a MF account entry is deleted, there is no undelete option in the app. May I ask you what kind of account are you referring to? Is it a Microsoft account or a third party account? Is it a personal or work account?
When things like this happen, the usual approach is to attempt logging into the affected account protected by 2FA using another verification method (if available - usually you are given the option to configure alternatives) and set up the two-step authentication again (or you may have the option to add a new device/authentication app and remove the old one for the verification process). Each platform has its own recovery/support flow. In some cases, you may need to reach out to the support team of the affected service in order to regain access to specific accounts - for example, if recovery methods were not previously set up or their policies require you to do so.
To be thorough, as you noticed, the Microsoft Authenticator app does offer a cloud backup feature but it is not designed to try to recover single entries. Furthermore, aside from the fact that the feature had to be manually enabled in advance, even if a backup from before the deletion is present, not all accounts (depending on the account type and provider) can be restored this way. Some restored accounts may also require additional verification before they can be used again on that device (which may be similar to completing a sort of two-step verification on another device/verification method). In short, unless you only had that one account entry you mentioned registered in the app (and had backup enabled beforehand), in my opinion it is not worth trying this way, as it could put other accounts you may have registered in the app at risk.
