Touchscreen stops working randomly when using OneNote/Evernote/Zoom

My university bought me a Surface Pro 7+ (i3 processor) for note taking and giving online presentations, but I have not been able to do that.

When using apps like OneNote or Evernote, the touchscreen stops working. The system keeps on functioning (as evidenced by one time when I was also sharing my screen on zoom and they could still hear me and see my camera) but the screen doesn't respond. The system is completely up to date and this problem has happened since I got the device. The only way I have found to solve it is to reboot it off via a long power button press. Lately, I have also had a problem where the touchscreen works but OneNote freezes. I found it weird, since I didn't get the usual "xxx has stopped responding" dialogue. I doubt that this is a problem just with OneNote since Evernote crashed the touchscreen exactly the same.

There is some correlation between using a note taking app + zoom and the touchscreen crashing. But it also crashes without both being on.

Any advice is appreciated...

    This is a video of the bug. The tablet is unusable as it crashes randomly like this, so I would really appreciate an answer.

    As you can see the touchscreen stops working while the connected mouse (which I connected after the screen crashed) works just fine, and the system is operating and no crash report pops out.
