What does device EOL actually mean?

I have a few surface devices, but still don't understand EOL for them. Like I know I can just install normal windows and it'll still work, so what's the point of EOL? No more updates for the firmware, like the cpu and gpu, but I should still be able to use windows and get normal security updates and stuff right? Or should I just move over to a normal windows install instead of the one with microsoft stuff thrown in (BMR install)?
