There are tons of guides now to uninstall new Edge (without modifications of permissions), even when uninstall is grayed out:

Upgrade to Microsoft Edge to take advantage of the latest features, security updates, and technical support.
I knew a way how to manually remove Microsoft Edge! Here's how to do it:
1: Open Command Prompt as admin.
2: Type in "takeown /f" and type in the Edge Chromium directory (C:\Program Files (x86)\Microsoft\Edge\Application\msedge.exe).
3: Now open the File Explorer and go to the Edge Chromium directory.
Right-click your mouse and select "Delete".
IMPORTANT: msedge.exe is normally owned by TrustedInstaller but there's a way to get permissions from that file to you.
I hope you have this question.
ALTERNATE WAY TO DELETE MSEDGE.EXE:
Type in the Command Prompt: cd C:\Program Files (x86)\Microsoft\Edge\Application
Type in del msedge.exe
You get prompted with "Are you sure you want to delete? (Y/N)". Type in Y.

You can also uninstall it using:
cd C:\Program Files (x86)\Microsoft\Edge\Applications[version number]\Installer
setup.exe --uninstall --system-level --verbose-logging --force-uninstall
If that stopped work one day, you can always boot into a live Linux system or Windows installation media to delete all the file under "C:\Program Files (x86)\Microsoft\Edge"
and "C:\Windows\SystemApps\Microsoft.MicrosoftEdge_8wekyb3d8bbwe"
That "our default web browser is an essential component of our operating system and can’t be uninstalled" is a lie just like what M$ has said about IE in Windows 95.
M$ is forcing people to use their **** again. It's time to move to some libre operating systems.

The utility ccleaner also does a reasonable job of removing the Edge bloatware.
Sadly now if you remove Edge new updates fail to install.
Microsoft need to wake up and make Windows an operating system without pre-installed stuff and let the owner of the computer decide what they want to install. Microsoft, wake up, it is my computer and not yours. Is it any wonder why unix/linux is so popular?
