I downloaded a Win10 ISO file from https://www.microsoft.com/en-us/software-download/windows10ISO to my MacBook Pro. When I try to create a new VM, I am asked for a product key. Where do I get it? Do I just buy a product key from Microsoft and it will work with the ISO file I downloaded?

Firstly, I think you can go to Microsoft vendors to purchase an appropriate Microsoft product key for your VMware, just like @Dave Patrick suggested.
Secondly, you can follow the steps in this article to install your virtual machine, it's an Easy Install method just as what you have tried:
