I'm looking to have my computer automatically lock when it is put to sleep, for some reason I am not seeing this setting directly in sign-in options despite the assurance that it is there, and it is not in lock screen settings?

I did switch to a local account, then I clicked "stop signing into microsoft automatically" and that also did not produce an option to lock the computer upon waking up.
Thank you for your continued help, by the way. I'm really not sure why, for the exact same settings, one computer comes to the lock screen after waking, and the other one opens to the desktop/workspace after waking.

Thank you for updating me with that information. Please try this if it helps.
Press Start then click Settings(Gear icon)
Select Personalization then click Lock screen
Click Screen saver settings
Tick the box "On resume, display log on screen"
Click Apply then Ok
