iPhone simulators gone (again)

Oooops, it did it again!

I updated Xcode and VS on Mac to the latest versions as of today May 10.
When I try to run the app, my list of simulators is now empty. In the past I was able to solve it by opening Xcode, and at that point it used to ask me to download missing components (the new simulators).

Now when I open Xcode, it doesn't prompt anything, and I don't know how to get my simulators back.

Does anybody have a solution?

    VS 8.9.8 (build 7) and Xcode 12.5

On a side note, I got the simulators back I believe after my 2nd or 3rd restart. Thanks.
