Here are all comments of the two issues for your reference.
Client Version Shows Wrong in WSUS Server.
It is a known issue. The version which shown on the WSUS console is Windows Update Agent version rather than the Windows Operation System version. In my opinion, the windows Update Agent is used to communicate with the WSUS server. So the version shown on the WSUS console is Windows Update Agent version not OS build. We're very sorry for any inconvenience that may caused, but it's the design. We could not change it right now.

WSUS Server Not Sync 21H1. (Upgrade & Windows 10 is Selected in Product & Classifications)
The feature updates for 21h1 did release by Microsoft. Please try to tick the products and classifications as the below picture and sync the feature updates. I have already tested in my lab. Here is a related screenshot for your reference:
