Hitting the space after the three graves is what starts the codeblock.

For a long time Muli-line code blocks were supported in teams as described on this page https://support.microsoft.com/en-au/office/use-markdown-formatting-in-microsoft-teams-4d10bd65-55e2-4b2d-a1f3-2bebdcd2c772. The page "Use Markdown Formatting In Teams" specifies:

At some point, this feature went away. I can still get inline block of code with a single backtick, but the triple backtick no longer works. I know I can use the insert code snippet, but that is very bulky in a chat message with the header and box, it is too much at times. Sometimes I just want to toss in a couple lines of code quick and easy and this feature doesn't seem to work any more.
This is happening on Windows 10 and 11. I have Microsoft Teams version 23306.3311.2542.4729(preview). The client version is 49/23110231808.

I'm AnnaThomas and I'd happily help you with your question. In this Forum, we are Microsoft consumers just like yourself no one here is a Microsoft employee.
You're not alone in facing this issue; other users have also reported the same problem. It's possible that Microsoft is aware of the issue and is working on a fix, but there's no official acknowledgment or timeline for when it will be resolved.
In the meantime, you can still use the inline code block feature with a single backtick for short code snippets. However, for longer code blocks, you'll need to use the insert code snippet option. While it's not as convenient, it's the only workaround available right now.
You can also report any issues or feedback to Microsoft through the Help > Give feedback option in Teams
