AD B2C Sign in with Apple with App Service already using Google Auth

Currently we are using the Google provider for the App Service's Authentication. On Apple enforcing that Sign in with Apple be available for iOS devices, we were hoping that the App Service Authentication would support it. On asking if that was something that was planned for the future, we were pointed to using AD B2C for Authentication since that supported adding Sign in with Apple as a provider. Would swapping to using AD B2C replace the current Authentication? And would that still work with accounts that have already used the current Google Authentication on the App Service?

Swapping to Azure B2C would require to disable the app service builtin authentication with and implement it in your app code using an SDK like MSAL.
